Cipriani pasta

By far the best dry pasta out there.  It’s hard to describe why it is different, but once you try it, you’ll see.  Made with pure durum wheat, the pasta is made with a high egg-to-flour ratio and put through the pasta-making machines over and over, making it light and airy.  This is the pasta served at Harry’s Bar in Venice.
