This stuff is definitely different from ordinary bacon. We shopped for it online and found shipping to be very expensive. Then we checked with our go-to meat guy in Key West, Jimmy Weekley of Fauso’s Food Palace, and, lo and behold, he had it! Not only did he have it, he had the Schaller & Weber bacon from upstate New York that we had read about. This bacon is slowly smoked in a tradition begun in eastern Europe. Try it!
