We love Harbour Island, a charming little island accessible only by boat off the coast of North Eleuthra in the Bahamas. This cocktail is our best attempt at replicating our daily lunch starter at Sip Sip, a beautiful island café perched on a hill overlooking the pink sand beach. Give it a try, and get yourself to Harbour Island for the real thing!
- 1 ½ oz. Mount Gay gold rum
- 1 ½ oz. Myers dark rum
- 2 oz. pure pineapple juice
- ½ oz. each of passion fruit nectar and guava juice
Fill a mixing glass with ice. Add ingredients, stir and pour over ice. Finish with a dark rum floater. (Warning: we like our drinks strong here at the Kitchen, so proceed with caution!)
